A few weeks ago I bought my first cast-iron skillet from Target in an effort to increase the amount of home cooking I do versus eating out or eating dinner at Google. Since the purchase, I’ve cooked dinner three times, probably more times than I have in the past few years I’ve been working.
Someone at work told me I had to cook bacon the first few times in order to give the skillet “soul”, and I wouldn’t want it to be soulless, so cook bacon I did. Here’s what I made for dinner tonight:
Ingredients:
- 3 strips of bacon
- 2 whole wheat french rolls
- 1/2 onion, diced
- 8 ounces left-over prime rib from Outback, sliced into strips
- Jack Daniels mustard or A1
First I put the bacon on the cold cast-iron skillet and turned up the heat to medium-high. After getting the bacon nice and crispy, I put the strips onto a plate wrapped in a paper towel. With a ton of bacon fat left in the skillet and temperature still on medium-high, I threw the diced onions in and took cover from the flying oil. The onions browned quickly and smelled great. I used tongs to take them out of the pan and into a separate bowl. I poured out the bacon fat, very carefully, into a styrofoam cup that was in the trash can - this proved to be a bad mistake, as the styrofoam disintegrated immediately and the fat continued down the trash.
To heat up the sliced prime rib, I heated it up in the still hot skillet, taking care to only heat it up and not cook it any further. In a separate pan, the rolls were buttered and toasted. My sandwich was spread with the Jack Daniels mustard, carefully placed the prime rib and bacon strips, and smothered in the onions.
The result was deeeelicious! I recommend cooking with cast-iron, and I highly recommend cooking with bacon!
